Tuesday was week 3 of pub trivia, and I am happy to report The Chinooks took 2nd place! Woo hoo! The bummer was that Kate was absent, but we luckily recruited some smart ladies.
Wednesday night I had a few friends over for a dinner club we started. The idea is to rotate homes and themes to create dishes we have never made before. I choose Caribbean as my theme and baked Caribbean salmon with guava BBQ sauce and mango salsa. Yes I ate fish. It was the salmon I caught in Alaska.
Two whole sides of salmon in the BBQ sauce. I made too much fish, but the recipe made too much BBQ sauce and salsa. Luckily, everyone got a serving to take home.
I almost cleaned my plate. I blame the plantains.
As part of the evening, each person makes an appetizer, side, main course (the host does this), or dessert. Since there are 4 of us, we can each rotate. Kate made double fried plantains with a garlic dipping sauce. So good! Joe made a side of sweet potatoes with zuccini. I decided that I don't eat enough sweet potatoes. Jared made a Key Lime chiffon pie with a graham cracker crust. The entire menu worked out perfectly! Next week we are eating at Joe's. He chose a muscial piece as the theme. I can't wait to listen to it and see what I come up with!
But then today I woke up with a sore throat. Everyone in my office has been super sick, so I figure I am coming upon the same fate. It is really disappointing because my 5K is Saturday. I was training to finish in less than 24:00. But I took yesterday off because of the dinner and today off because I wasn't feeling well. Bummer! I might go to spin class tomorrow morning, but I am already starting to loose my voice. Luckily, there is another 5K on Superbowl Sunday and one on February 17. So if I do poorly at this race, I can always do another. Plus it is supposed to be 28 degrees on Saturday and there is 3 inches of snow on the ground which might make it a tough run. Fun fun!
Because of my cold, I broke out my humidifier which is shaped like a penguin. It makes me happy.
Cute huh? I also have been drinking plenty of fluid this week as part of a fitness challenge at work. Hopefully, I can beat this cold before it beats me.
Finally, my other big news are my new spin shoes, pictured above. Thanks Mom for chipping in for them as a birthday gift. I have been spinning for over a year now and love it. Because of my achilles tendinitis, spinning is a great option for a high cardio, but low impact, workout. Since I have been so into spinning and running, I was considering doing an indoor triathlon. It would be 20 minutes in a pool, 20 minutes on a bike, and 20 minutes on a treadmill. Your total distance would be measured. It sounded like a good way to try something new, although I would need to spend some quality time in the pool. However, trying to balance class, work, and the 5K, topped off by my new cold, made me realize I can't do it all. I am not Super Woman. I will have to wait until I have a "real job," no homework, and more free time to train. Oh well.
This weekend I am putting together materials for my thesis project. I am starting testing next week and should finish up by the end of February. That will give me some time to analyze the data and write. Woo hoo!
